Recipe Wednesday - Buffalo Burgers

I don't think I've posted a recipe for this yet. Correct me if I'm wrong! It's a very simple take on hamburgers using ground buffalo and tofu.

Buffalo Burgers

1 pound ground buffalo
3-4 oz lite firm tofu
1 teaspoon Worcestershire sauce
1/2 packet dry onion soup mix
fresh ground pepper, to taste

1. Mix everything together in a large bowl. Be sure to shake the packet of onion soup before you divide it in half. The dried onions usually are on the top, and the seasoning is on the bottom. You could use the whole packet, but I find the taste a little strong.

2. Divide the mixture into 4 burgers and cook in a pan, on a George Foreman grill, on an outdoor grill - however you like to cook your burgers.

3. I like to top it with a Tablespoon of salsa, but top it with whatever you like!



One burger, without toppings, with my particular brands, has approximately:

143.2 calories
26.3g protein
2.4g fat
2.25g carbs
0g fiber

Curious - why the tofu?

I use it as a binder instead of an egg. I have found it makes a more dense, firm burger. And it's less goopy when you stick your hands in the bowl to mix everything up! :)

Ah. Interesting. That leads me to one of my favorite "new" recipes - lamb meatballs (http://cavemanfood.blogspot.com/2008/07/lamb-meatballs-with-tahini-dipping.html). This one uses eggplant for binding duties (to replace breadcrumbs).

These meatballs / dipping sauce are amazing.

I introduced my family to the wonders of Buffalo last summer. Easily the best burgers ever! I used to add onion mix and Worcestershire, but now I just add an egg...a stripped-down burger tasting good on its own merit.

Sounds delicious, Abby...I like the idea of adding a little onion soup mix...I do that with oven-roasted potatoes...I'll have to try it in a burger!

Mark - I'll have to try those! I've been looking to try eggplant.

Smoke - I love using buffalo as a substitute for ground beef in meatloaf too!

Fred - Hope you like them! My Mom used to make burgers with soup mix so I have to give her the credit. We used to call them "souped-up burgers" when I was a kid.
