My Vegan Challenge

All this week I've had "We've got the power, so can yoooooooooooouuuuuuu" stuck in my head. My husband got me She-Ra, Season 1, Volume 1 for Christmas. The kids are loving it, especially my daughter. She is totally into "Princess" and go-go Girl Power! :)

This week I've been undergoing a "vegan challenge". I had joined the 21-Day Vegan Kickstart (free to join), which began on January 3, but I didn't follow a vegan plan for the entire first week. Then I learned about a "vegan challenge" where I work. They were doing a 7-day challenge, and I was determined to give it a try. (A vegan diet contains no animal products - so no meat, dairy, eggs, honey.)

The majority of my meals this week came from Brendan Brazier's Thrive: The Vegan Nutrition Guide to Optimal Performance in Sports and Life and from Robin Robertson's Vegan Planet. In some ways, it was nice (lots of fruits and veggies, new recipes to try), but my food processor definitely got a workout, and so did my digestive tract. Let's just say I had a lot of fiber and flax. :)

Here's my menu so far this week (in somewhat random order, not necessarily by meal):

Quite frankly, I miss eggs. I don't really miss meat, but I miss eggs. Thursday night I had a dream that I ate something with egg in it and after I ate it I thought, "Wait, eggs aren't vegan!" and then I woke up. One of my son's favorite meals is "eggs and toast" and we usually have that for dinner a few times a month, so I think those dinners will stay. :)

Energy-wise, for the first 3 days I was kind of tired (probably sugar withdrawal) but by Thursday, I had tons of energy. Basement painting here I come! We are turning part of the basement into a playroom for the kids. I let the kids choose the colors - one wall will be pink, and the other will be green.

Have a great weekend!

Tasty Tuesday - Chocolate Tofu Mousse

This recipe was created when the kids were asking for chocolate pudding and I looked around the kitchen to see what I had on hand. It makes a nice and light chocolate dessert. Plus, it's super easy to make!

Chocolate Tofu Mousse

12 oz package lite silken tofu
1 scoop chocolate protein powder
2 Tablespoons unsweetened cocoa powder
1/2 cup unsweetened chocolate almond milk
2 packets Stevia
1/2 teaspoon vanilla

1. Blend all ingredients in the bowl of a food processor for several minutes until light and fluffy, stopping and scraping the sides of the bowl if necessary. Just when you think it's done, let it blend a little longer. :)

2. Pour into 4 pudding dishes. Each serving will be about 1/2 cup.

Each 1/2 cup serving will have approximately:

66 calories
8.5g protein
1.8g fat
4.0g carbs
2.1g fiber

Enjoy!

Recipe Wednesday - Chocolate Chip Cookies

My mom makes the best chocolate chip cookies. They are basically the Original Toll House Recipe with just a little tweak. But instead of giving away her secret, I'm going to share my adapted, slightly healthier version. After all, a cookie is still a cookie. :)

Chocolate Chip Cookies

1.5 cups spelt or whole wheat flour
1/4 cup sorghum flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1.5 sticks) butter, softened
2 Tablespoons coconut oil
2 Tablespoons pumpkin puree
1/2 cup powdered Stevia (I used "Stevia in the Raw")
3/4 cup Sucanat
1 Tablespoon unsulphured molasses
1 teaspoon vanilla extract
2 eggs
1 (10 oz) package of grain-sweetened chocolate chips
3/4 cup chopped walnuts

1. Preheat oven to 375 degrees.

2. In a small bowl, blend flours, baking soda and salt.

3. With a mixer, beat butter, Stevia, Sucanat, molasses and vanilla extract until smooth. Add the coconut oil and pumpkin. Then add the eggs one at a time, blending well after each one.

4. Gradually beat in the flour mixture. Stir in the chocolate chips and walnuts.

5. Drop by rounded tablespoon onto an ungreased cookie sheet. (I used a small scoop and used parchment paper on my cookie sheet.)

6. Bake for 8-9 minutes. Do not overbake.

According to the Toll House website, their recipe makes 60 cookies at 110 calories each. I made 49 cookies at about 92 calories each.

Sorry for the bad picture. Maybe Santa will bring me a new camera. :)

Happy Holidays!!!

Psst...Can You Keep A Secret?

I think I found the perfect anniversary gift for my husband. Our 6th wedding anniversary is coming up soon and the "Traditional Gift" is candy! I recently found this bar of chocolate and thought it was perfect! It's a "Marital Bliss" bar, showing the even distribution of assets within the marriage. Or, at least the distribution of chocolate. ;)

I feel OK posting this because I'm pretty confident my husband doesn't read my blog. Or if he does, he doesn't let on that he does. :) So, what do you think? Anyone know of some other really good candy that would be a nice gift?

Looking at that bar of chocolate is making me hungry. I'm getting ready to eat soon - just completed an Eat Stop Eat lunch-to-lunch fast. Whoo-hoo!
