Thanksgiving Recipe

Here's a special edition Recipe Wednesday (well, technically Thursday!) for Thanksgiving. I made this today and brought it over to the family dinner. It went over well, and people seemed to like that the dish wasn't as sweet as the "traditional" sweet potatoes with the marshmallows on top.

1 40oz can sweet potatoes, drained (rinsed and drained, if desired)
1 8oz can crushed pineapple in juice, drained
1T butter, melted
1T packed brown sugar
2T walnuts


1. Preheat oven to 350
2. Place sweet potatoes in a baking dish
3. Spoon pineapple over sweet potatoes
4. Mix melted butter and brown sugar and drizzle over the sweet potatoes/pineapple
5. Sprinkle walnuts over the top
6. Bake for 30-35 minutes


If it is not sweet enough for you, you could use 2T butter and 2T brown sugar, and/or don't rinse the syrup off of the sweet potatoes.

Yummy! We don't have thanksgiving, and it's summer, but I'm going to make it anyway.
Abby, you look awesome in your latest 'after' photos. You look like a teenager (but with amazing muscly thighs). You must be proud of yourself. Do your kids think you are a superhero that can pick up cars? (I have a friend that trains and her boys think she is superhuman, they say the cutest things).

Thanks! I hope you like the recipe. As far as I know, they haven't mentioned anything about me being a superhero, but my 4 year old son likes to show me his muscles and does his version of decline push ups with his feet on the couch. I like to think I'm a good influence in that regard!
